Picked in October, our 2017 Cabernet Sauvignon has a range of ripeness level to work with. Half of the fermentation was punched down and the other half pumped over to combine two different extraction styles and draw out a greater diversity of tannins. Aged for 21 months in French oak barrels, we then blended these barrels to bring out the grip and edge of a young Bordeaux with the broad palate of a classic Washington Cabernet. This New World Bordeaux style wine is a beautiful bright garnet color with aromas of anise, cocoa, marzipan and red currant. On the palate find elegant flavors of cassis and pomegranate finishing with Old World notes of cedar, graphite, eucalyptus, bramble and back cherry. Try with grilled ribeye steak with Cipollini onions, Korean style BBQ ribs, or Samish Bay creamery Twin Sisters blue cheese.
