Cave B Vineyards in the Ancient Lakes AVA. Grown on the site of the Gorge Amphitheater. This is their original Chardonnay planting that will be torn up in favor of a parking lot any year now. I think there’s a Joni Mitchell song about paving paradise that illustrates this predicament quite well.
Fermented entirely in barrel, half in new French oak. The barrels were stirred weekly following fermentation. Blended to highlight what oak and Chardonnay can do together when the result isn’t hijacked by cloying buttery and coconut flavors.
Rich, creamy nose and palate fringed with ripe pear, kaffir lime leaf and panna cotta.
2018 to 2025. Should deepen and expand with every year that passes.
