Picked in October, we destemmed our Merlot fruit without crushing the berries for a more gentle extraction. Fermented as whole berries in an oak tank and aged in French oak barrels, you will find aromas of blackberry compote, ripe plum and cassis with notes of rosemary, rose petals, cinnamon stick and alder smoke. On the palate this elegant wine shows balance with flavors of ripe blackberry, pipe tobacco and rosemary with a finish of mouthwatering silky tannins which are enhanced by a sensation of wet stone, sauteed morel mushroom and candied cherry.
