2017 Cabernet Sauvignon- Picked in October, our 2017 Cabernet Sauvignon has a range of ripeness level to work with. Half of the fermentation was punched down and the other half pumped over to combine two different extraction styles and draw out a greater diversity of tannins. Aged for 21 months in French oak barrels, we then blended these barrels to bring out the grip and edge of a young Bordeaux with the broad palate of a classic Washington Cabernet. This New World Bordeaux style wine is a beautiful bright garnet color with aromas of anise, cocoa, marzipan and red currant. On the palate find elegant flavors of cassis and pomegranate finishing with Old World notes of cedar, graphite, eucalyptus, bramble and back cherry. Try with grilled ribeye steak with Cipollini onions, Korean style BBQ ribs, or Samish Bay creamery Twin Sisters blue cheese.
2018 Cabertnet Sauvignon- The deeply concentrated garnet color foreshadows the intensity of this wine. Bold aromas of ripe blackberries and black cherries are backed by notes of vanilla and cardamom seeds. On the palate find rich bramble and deep black plum backed by flavors of black olive, mint and under ripe raspberry. The finish is long and full with pronounced but pleasant tannins, lingering black fruit flavors and rich notes of toasted brioche.
2019 Cabertnet Sauvignon- A deep ruby red color, this full bodied Cabernet offers aromas of ripe black cherry, anise and rosemary. Deep flavors of ripe black cherry and black plum dominate and are followed by notes of late summer blackberry and hints of chicory, tobacco leaf and baking spice. On the finish the juicy mouthfeel takes a backseat to a pleasant astringency and long lasting flavors of bramble and dried rosemary.
