Winemaker Notes
Harvested on October 10, we did 24 hours of skin contact to extract tannins for texture and a bit of color. Fermented and aged in small-lot stainless steel and neutral oak barrel to highlight the trace of tannins and preserve acidity.

Sardine pasta with lemon zest and parlsey, sauteed kale with garlic and pimenton.
